A note on horseradish from Farmer Rob:
Because I am often teaching interns who want to farm commercially, I like to show that the horseradish is best stored right in the ground until late winter when it can be dug closer to a key market opportunity, which is Passover. Horseradish is commonly used as the bitter herb in the Passover Seder.Once the horseradish has been harvested and compost spread in the garden, the garden will be ready to plow in anticipation of spring planting.
